Who doesn’t love waffles? Who????? -No one.
- 2 c all purpose flour
- 3 1/2 tsp baking powder
- 1 tsp sugar
- 1/2 tsp salt
- 2 eggs
- 4 tbsp melted butter
- 1 1/2 c buttermilk
Preheat your waffle iron on your desired setting and spray with nonstick cooking spray
Combine all the dry ingredients into a large bowl. You can sift them together if you want, but since I use good ol’ White Lily, and its already so light and airy on its own, this isn’t necessary if you’re using the same brand. Yeah on second thought you might wanna gone on ahead and sift them together.
In a separate bowl, beat the eggs together and add the butter and buttermilk.
Combine the wet ingredients into the dry ingredients and mix them together. Be careful not to over-mix because then you’ll end up with tough waffles.
Spoon the waffle mixture into the waffle iron and cook until done.
- SN: I usually throw the first waffle away. Idk…in my mind it’s like this one is cleaning the waffle iron somehow.
These go well with butter and syrup, but also you can freeze these for up to a week in a freezer bag and pop em in the toaster if you’re on the go.
