• 1 stick melted butter
  • 2 tsp water
  • 2 egg yolks
  • lemon juice, not a lot, like a tsp or 2
  • dash of hot sauce
  • salt and pepper to taste

In a double boiler, whisk the egg yolks with the water, lemon juice and salt and pepper until they are pale yellow in color.  You have to whisk them frequently to prevent them from cooking and be careful not to have the heat too high otherwise they’ll cook!

  • Note: if you don’t have a double boiler, like most ppl don’t, then you can boil a pot of water and use a stainless steel bowl.  Just be careful not to let the bowl touch the water.  It’s actually easier to do it this way and this is normally what I use. 

Remove the top portion of the boiler from the heat and whisk in the butter, in parts (prolly like by tablespoons) until all are combined.
