Ok so I’m allergic to blueberries.  I know right!  But this was a request by a coworker, so whatevs


  • 1 stick of butter at room temperature
  • 1 c sugar
  • 2 eggs
  • 1 tsp vanilla flavoring
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 bag of dried blueberries
  • 1/2 c milk
  • pinch of cinnamon
  • extra sugar for decorating (optional)

Preheat oven to 375°F

Cream the butter with the sugar together and add in the eggs one at a time, then add in the vanilla.  Combine thoroughly.

Mix the dry ingredients together in a bowl: flour, salt, baking powder and cinnamon until combined.

Heat the milk (but do not bring it to a boil) then add in the dried blueberries.  Allow this mixture to cool.  Drain the milk from the blueberries and set aside.  Add the blueberries to the dry mixture; this will keep them from sinking to the bottom of the muffins.

Combine the butter mixture with the dry ingredients and add the cooled milk last.

Fill a muffin pan lined with cups or non-stick spray about 3/4 full. Sprinkle the sugar over the tops of the muffins and bBake for about 20 mins or until the tops of the muffins have risen.  Cool and serve
