  • 1 1/2 c all purpose flour
  • 2/3 c sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2-3 mashed bananas
  • 1 egg, beaten
  • 1/3 c oil
  • 1 c semisweet chocolate chips

Preheat oven to 375°F

In a large bowl, mix the flour, sugar, baking powder and salt together.  Mix in the chocolate chips to make sure they are coated with the dry ingredients (this keeps them from sinking to the bottom during baking) and set aside.

Extract the flavor from the bananas using the same method as the Banana Bread recipe.  Mash the cooled bananas and set aside after combining with the extracted liquid.  Mix in the egg and combine with the oil.

Mix the wet ingredient mixture in with the dry ingredients and combine, being careful not to over mix the batter.

Bake for about 30 mins or so in a lined muffin pan until the muffins are done.  Allow them to cool before serving.
