It’s Monday yall.  And believe it or not, I’m not having a bad day so far.  But already I’ve had more than my desired share of phuckery before lunchtime.

You know how when you are young, like real young, like 5 years old… and you have this idea of how your life will be when you get older… and now that you’re older… your life aint like you thought it would be… and you wonder where it all went wrong… how many ellipses can I possibly use in one sentence…

Ok but for real though, I’m happy with where I am and where I’m going and all.  But, what I could not have accounted for back in the late 1980’s when I was just beginning school and what not was the amount of pure phuckery that would be in abundance at this phase in my life.  Like, where did it all go wrong lawd?????

Sometimes there are periods in our lives where it seems like people are just tryina pull it from every angle on every end.  I can’t say that this is one of those times, but it’s definitely reminiscent of one and I’m not here for it.  At. All.

First off, waking up to a text message that is somewhat accusatory in tone <<<<

Like, bro, if you want to talk to me, then call me.  Don’t purposely not call/text me just to see if I’d call/text you and when I don’t you bring it up later on some ‘ah ha!’ type a shit.  How whack is that?!?!  It wreaks of insecurity and is not at all helping your cause.

And what else I don’t understand is how some people can be so damn simple!  Like ignorance is not only bliss, but it’s a privilege that apparently I’ve never had the luxury of having.  I wonder how it feels to be an ‘adult’ but be so basic?  I don’t wanna get into too many specifics, but here’s how a conversation went in this meeting I just had at work:

Tweedle Dee: [speaking of credit card theft/fraud] “It’s scary”

Tweedle Dumb: “yeah cuz what’s really scary is if someone steals your license and they look like you then they can go into a bank and withdraw money from your account”

Me: *blank stare*

Just wanted to get my Monday morning mini-rant outta the way.

Hummingbird Cake

I’m really flattered that I was asked to participate in a bake-off down to da job.  I don’t think I’ll end up baking anything tho- it’s too short of a notice for my tastes.  But if I were going to bake something quick, easy, and delicious, it would not be this lol!  But no since it’s summa time and all…hummingbird cake is the move!

  • 2 3/4 c flour
  • 1 c chopped pecans
  • 3 medium sized ripe bananas, chopped
  • 1/2 c crushed pineapple
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs, at room temperature
  • 1 3/4 c sugar
  • 1 c oil
  • Cream Cheese Frosting

Preheat oven to 350ºF and properly flour and oil 2 round cake pans. Set these aside.

In a large bowl, combine the bananas, pineapple and pecans and mix to combine.  I personally don’t care for pecans, but trust me, you want them in this cake.  If you chop them fine enough they are pretty undetectable.  Coat them in a small portion of the flower, you’ll wanna do this so that they don’t all sink to the bottom during baking.

Add the spices including the salt, baking soda and sugar to a bowl and mix to combine.

In a small bowl, beat the 3 eggs with the oil then add them into the flour mixture.  Combine to make a batter and fold in the fruit/nut mixture.

Distribute the batter evenly between the two cake pans and bake until the cake is done and an inserted toothpick comes out clean, for about 50 mins.  Allow the cakes to cool thoroughly before frosting and enjoy!
