For this week’s Friday Night Fish Fry, we’re switching it up just a little but. We wanted to introduce a new series dealing with fatigue; some of the ways in which we are all feeling fatigue right about now and how we can try and maintain some semblance of self care while navigating these trials. After all, we’re all human and the world is pretty crazy right now.
So I don’t know about y’all, but I have just about had it. And by it I mean everything. Everything? EVERYTHING! We’ve been in the longest-running game of Jumanji that is this pandemic for way too long; people are just now starting to acknowledge the fact that black people exist and racism might just be a real thing; and I’m tired of putting on a nice blouse with my pajama pants to appear ‘professional’ while on my 5,255,999th zoom call (which could have been an email!).
Here at SOLE Food we are committed to wellness; living our best lives, no matter the circumstances. We recognize that we are all fatigued in some way or another, and this is ok. After all, we are all human. However, we also want to remind everyone (ourselves included) that we have to be even more vigilant in our efforts to care for ourselves, even in the midst of the world being on fire. So we’ll be doing a three-part, open-ended discussion on some of the ways in which we may all be feeling it right now. We’ll also share some ways that we have found solace- take or leave whatever you may need.
On another note, something else has come to our attention. Did you know that today, May 14, in the year of our Lord 2021 is National Biscuit Day???? Ikr! We didn’t either. But in honor of this auspicious occasion, we’re giving you not 1, but 2 biscuit recipes. We thought about making biscuits on our IG live, but I, for one, am desperately trying to get this snack demon offa me! Summer still on the way and the streets are calling my name!

Buttermilk Biscuits
Ingredients
- 2 c all purpose flour (White Lily!)
- 1 tsp salt
- 1/4 tsp baking soda
- 1 tbsp baking powder
- 6 tbsp cold butter(you can use unsalted or salted, I prefer salted because I like butter)
- 1 c buttermilk (you can find substitutes for buttermilk here.)
Preheat oven to 450°F
In a medium non-reactive (not plastic or paper) bowl, mix all the dry ingredients and stir together.
Meanwhile, grate the butter on top of the flour mixture and combine it until it’s somewhat coarse. I like to do this with my hands. But move fast cuz you don’t want the butter to melt. (I like to put my butter in the freezer for a little while just so it’s as cold as possible).
Make a well in the center of the mixture to pour in the buttermilk and combine this gently with a rubber spatula. Once it’s combined then turn the dough out onto a floured surface and form it into a disk. DO NOT USE A ROLLING PIN! You don’t wanna over-work the dough if you want fluffy biscuits. I usually do a triple fold for the dough just to have layers but this is totally up to you. Cut out circles and place them in a biscuit pan, fairly close together so they’ll rise higher.
Bake for about 10-15 mins, butter them with the melted butter of your choice and bone apple tea!
